My late father made all the Small goods for the Now defunt Auckland Meat Company, I used to watch him mix the ingreedence etc I still have his hand written recipes. I wish he was still around to help me.
I made a batch of your Kranskys over the weekend, Flavour and Consistency was very good. The Hog skins that I used spoiled the sausage asthey ended up being tough, maybe the 1st time I have have used this Smoke House or the age of the skins, the pink color did not come thru the outside of the Sausage.
